4 Ingredient No Bake Chocolate PB Bars **Vegan, Gluten & Dairy Free**

Hellllooo!!! Happy Friday to all of you! I hope everyone had a good week and are ready for the weekend. I tried a new little treat this week that I wanted to share with you all. You can thank me later 🙂  I have a new obsession with Beaming Baker. If you do not follow her on social media, you are missing out on some goodness. She make so many yummy treats that are mainly plant based and allergy friendly. WIN!

I recently was drooling over another one of her foodie pictures and decided to try her 4 Ingredient No Bake Chocolate PB Bars. YOU GUUUYYYSSSS! They were so simple, even I couldn’t mess them up and they are pretty delicious. My husband and I can’t stop eating them and I knew I had to share them with you all. These curb a sweet tooth very quickly and another bonus is they are pretty sweet so they are an indulgence that you really only need one little bar at a time and you’re good to go. If you’re looking for a healthier treat at home, try these out. I promise you will not regret it. Ever since having JoMarie, I get a little sweet tooth almost every afternoon. I have been bringing one of these little bars to work each day and grab it when that sweet tooth kicks in and I’m good to go.

One thing we did notice is they are awesome when you first make them but we enjoyed them more the second day after they had plenty of time to chill in the fridge. The PB layer stays soft and the chocolate layer hardens and yum. Just yum. Try it out, let me know what you think! 4 Ingredient No Bake Chocolate PB Bars **Vegan, Gluten & Dairy Free**

Ingredients

  • PEANUT BUTTER LAYER
  • 1 cup natural unsalted peanut butter
  • 1/2 cup + 2 tablespoons pure maple syrup
  • 1/2 cup coconut flour
  • CHOCOLATE TOPPING
  • 1 cup vegan chocolate chips
  • 1/2 cup unsalted natural peanut butter

Instructions

  1. Line an 8X8 baking pan with parchment paper
  2. Mix your PB layer ingredients together
  3. Spread your PB mixture in the pan
  4. Combine your chocolate topping ingredients in a microwave safe bowl and microwave for 20 seconds at a time, stirring between, until the chocolate and PB is all melted together
  5. Spread your chocolate spread over your PB mixture in your plan
  6. Freeze for 30-40 minutes and cut into 16 square pieces
  7. Store in fridge
  8. Enjoy!!

Healthy Breakfast Burritos

Happy Monday! Does anyone else have a little extra hop in their step today knowing it’s a short week? Well, I at least hope it’s a short week for you and that you all get some time to spend with the people you are thankful for over this Holiday weekend.

I have mentioned before that preparation is key in maintaining a healthy lifestyle. A major weakness in my household is breakfast.  I have gotten much better at eating some sort of breakfast since I am obsessed with smoothies, but unless I put something quick and easy in front of Nick’s face, he skips breakfast all together. I am always looking for something new and easy to try.  Some of my favorites have been Chia Seed Pudding, Overnight Oats, and Skinny Pumpkin Muffins.  How many times have you Pinterest lovers scrolled past DIY frozen breakfast burritos? We finally tried these suckers out and LOVE them!

They were extremely easy to make, cheap, healthy, and are a nice warm breakfast for mornings on the go. I got the approval text today saying “these are amazing” so it’s a WIN! This time we used whole wheat tortillas, hash browns, eggs, turkey sausage, mushrooms, peppers, and dairy free cheese. Try it out!! I will definitely be jumping back to these when we have kiddos someday too. The prep took us about 20 minutes and was enough to have 10 individual breakfast meals. Just grab it from the freezer, throw in the microwave and off you go!

 Hints: Be sure to wrap each individual tortilla before putting in freezer bag. Don’t overload your tortillas- they are hard to wrap! Microwave about 1.5 minutes. Add hot sauce if desired 🙂

3 Ingredient Dairy Free Peanut Butter Cookies

Gooood Morning!! Today is such a great day for a number of different reasons. ONE, over 50 awesome people are starting my 30 Day Lower Body challenge today, you all are amazing!! It’s time to rock September!! TWO, it’s the first day of September, which means new goals, football season, and most importantly, a fresh new page to write on in my planner 😉 AND reason number THREE for today being a great day is we are one day closer to the holiday weekend.

Today I’m getting down to some real talk and discussing my unexpected, overwhelming, large and in CHARGE sweet tooth lately. I’m a meat and potatoes gal and have never been too interested in sweets. But a few times a year that sweet tooth creeps in and decides to hangout for some time.

I needed something to quickly satisfy this NEED. Yes, it was a “need” 😉 Yes, I do try to eat healthy 90% of the time and have certain types of foods I will not eat BUT let’s be real for a second! When that sweet tooth comes in strong, a girl has to do what she has to do! I whipped up these peanut butter cookies in literally  5 minutes and after some baking time, BOOM! I was in heaven.

These were so incredibly easy and although they are not the healthiest of snacks, with some moderation control and modifications I suggest, they won’t hurt ya!

Ingredients:
1 cup Peanut Butter (using organic PB or almond butter is a healthier alternative)
1 cup Sugar (I did 1/2 cup sugar and 1/2 cup agave nectar)
1 Egg
Directions: 
Preheat oven to 350 degrees
Mix ingredients together
Roll into balls and place on un-greased cookie sheet
Flatten out with fork
Bake for 10 minutes

Weekly Goodness: Take 2

FRIDAY! Who is ready to get this party started?? Do you just wake up with a little extra hop in your step on Friday’s? I sure do! I hope you all are doing well and are excited for the weekend ahead. Here we are already, for Take 2 of Weekly Goodness. Just some of the MY GOODNESS throughout the last week to share with you. Enjoy and have a great day everyone 🙂

Let’s start it off with some of my food favorites this week, because I’m hungry as I’m typing this and it will help the decide on what I want for breakfast 😉 I can’t get enough Acai Bowl’s in my life (first picture) they are such a good breakfast or “bedtime snack” and they are certainly a hit in our house. I’ve also been weirdly obsessed with making hummus egg bowls. Put eggs, mushrooms, spinach, turkey, and hummus in a pan to cook all together and throw it in a bowl with hot sauce.

Next up is workouts!! This week has been full of variety with joining everyone in my 31 Day Fitness Challenge, doing a new core challenge with my girlfriend, morning workouts with Guinness;), and increasing my weights in my lifting program. My favorite though is definitely working out with my husband. Nothing pushes you like partner workouts!

Fall?! I have to agree with those crazy people I see already talking about craving pumpkin spice lattes, sweatshirts, and football games! Ever since our Cabo trip I have been completely ready for Fall to make an appearance. Forever21 already has out so many fall pieces, I can’t wait to dig in a little!! Speaking of Fall fashion, my featured blogger today is miss Bethany from simplybethany. This girl is so sweet and has the best style! Her blog is tons of fun to follow along with and get some fashion tips 🙂

I have not sat down once to do school work or blog work without having Guinness and Daisy sitting or laying right by my side. Dairy Free Chia Pudding

Happy Monday to YOU! The weekends just continue to fly right by us so quickly. I finally got to crackin and dedicated majority of my weekend to school work. I know that is extremely exciting and you all are very jealous 😉 We did fit in some family time, workouts,  had a little cooking date, and some blog prepping to make my weekend not entirely consistent of typing fingers and my nose in a textbook. I hope you all had a great weekend!

Today I’m sharing a recipe with you all. I don’t like to go into much detail or tell you about any recipes I haven’t personally tried myself and as most of you know my husband wears the chef hat in our household so it’s not often I get to share recipes. Welllll I tried something new and it’s worth sharing 🙂

We are all about easy and on the go breakfast during the week. I made this Chia Seed Pudding the night before and had it for breakfast the next morning. It was SO good. It literally taste like having vanilla ice cream for breakfast, with the health benefits of amazing chia seeds and fresh fruit… WIN WIN! My diet is lactose free so we have been playing around with some dairy free recipes and this quick and easy little number is at the top of my list now. Chia seeds are a power food that I suggest adding in every smoothie so knowing this pudding has so many of them in it, I was so excited to try and it didn’t disappoint.

It literally look me maybe 5 minutes last night to prepare today’s breakfast. All you do is mix the three ingredients together, pour them into a container that will be sealed tight (we used mason jars), and throw it in the fridge until the next morning. Add the toppings you prefer in the morning and you are set.

Chia Seed Pudding
  • 13 oz coconut milk (this is in fact dairy free)
  • 1/4 cup of chia seeds
  • 1 tbsp. agave nectar (honey)
  • 1 tsp. vanilla (optional)
Mix everything together, put into your containers, refrigerate over night, add your toppings of choice the next morning & enjoy!

Toppings suggestions:

  • blueberries
  • strawberries
  • shaved almonds
  • shaved unsweetened coconut
  • dried cranberries
  • granola

Tips for Chia Seed Pudding:

  • Have floss on hand! Those little seeds just love to get in your teeth and hangout
  • Next time I may use a little less coconut milk
  • Give it a try! Some people stay away from chia seeds because they seem odd, but they have zero taste, it’s just the texture. The health benefits from these little tiny seeds are SO great!!

Two New Quick & At Home HIIT Workouts!

It’s SUNDAY!! Although I love this day, I can’t say I love that I’m currently sitting in front of my sliding glass door watching the snow fall. YES, I said snow! I went to wearing flats on Friday to now it’s looking like I will be shoveling the driveway tomorrow morning. FOR THE LOVE! Even Guinness is confused with what the heck is going on outside!

This weekend was full of friends, family, workouts, devotions, and prepping for the week ahead. Enjoy two new HIIT workouts that I did this weekend. Anything that you can do quickly at home, and feel the burn, is worth it to me!

SUNDAY PREP

What are your health goals for the week ahead and how will you stay on track with them? 

My goals: Drink 80 oz of water each day, incorporate yoga at least once this week, and take the time to stretch after my workouts!

How I will stay on track: I’m making myself drink 20 oz of water before any coffee in the morning, I will chug right through that 20 oz!! I also have my workouts planned out for the week, and as of now, yoga is on that plan. When I workout over my lunch hour, I’m going to be sure I save at least 5 minutes at the end of each workout, to stretch.

Friday Weekly Goodness

It’s FRIDAY and the sun is shining here in beautiful Minnesota! It’s 61 degrees here and the snow is pretty much all melted. This kind of weather in MN, in March of COURSE means the streets are flooded with people walking and running, people are wearing shorts and sandals, you will see 90% of people driving with their sunroofs open, and the whole “Minnesota Nice” is taken to a new level… everyone is happy 🙂

Below is a camera roll version of my favorite GOODNESS from this week. From puppies, to babies, workouts, to food, and lets not forget the new Almond dairy free creamer I came across?! YES please! Let’s add in my new favorite glass water bottle from a sweet girlfriend, fresh grapefruit from Arizona, and a much needed reminder and we are good! Have a great weekend all!! Dairy Free Coffee Creamer & At Home Upper Body HIIT

Wednesday already?! This week is flying by and I’m perfectly okay with that. We are in the smack dab middle of a couple bigger projects at home right now and my house is a disaster! A weekend to wrap up projects and have things back to “normal” will be so nice. I of course will be sharing some of our DIY projects with you all once complete!

I found this Dairy Free Coffee Creamer and I’m in heaven!! The vanilla almond milk just wasn’t cutting it and thankfully I stumbled across this deliciousness.

We had a great time <3 First picture is obviously Nick and I, next up are the stunning newlyweds, and lastly is my brother-in-law and his wife—-> jumping back to yesterdays post on Kayla Itsines BBG, my sister-in-law is who got me hooked on this program and she’s seeing amazing results! She’s always been in killer shape and after childbirth this program is helping her tone everything right back up.  Would you believe this little lady has an almost 2 year old AND almost 8 month old?!? I hope to be this tiny after babies!

Dairy Free/No Bake Energy Bites!

How many Energy Bite recipes have we all scrolled across on Pinterest? SO many! Every stinking time I tell myself “I should really make those” well finally I did! I was getting sick of our every day “healthy” snacks we keep in the house and was ready to change it up. These are perfect to grab and go.

I stay out of the kitchen for the most part in our house. I can make our lunches like a pro, whip up a mean cup of coffee, make smoothies like its my job and assist my husband by grabbing something from the fridge or constantly stirring something but let me tell you… these little amazing energy bites were easy peasy! We had majority of the ingredients on hand, but I did have to run to the store for flax seed and vanilla extract. Who doesn’t have vanilla extract on hand?!The below recipe made around 20 Energy Bites and they lasted 4 days!! They were a hit 🙂 Nick never eats breakfast (naughty naughty!) but he would eat two of these each morning and he’s asking me to make more. SUCCESS!! I did give up sweets for Lint so the next batch will have to be a little different with no chocolate chips, darn! Check this website out… 30 different energy ball recipes?! yes please!!

Ingredients:

  • 1 cup (dry) oatmeal
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup chocolate chips or cacao nibs (optional)
  • 1/3 cup honey or agave nectar
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

Directions:

  1. Stir all ingredients together in a bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
  2. Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep refrigerated for up to 1 week.
  3. Makes about 20-25 balls.

I won’t say I felt a JOLT of energy after eating these, but they were a filling healthy snack that didn’t leave me feeling bloated or bad about eating 1 or 2 or 3 at a time 😉 Give them a try!

Happy Happy Wednesday! My apologies for my lack of posts lately, February is a crazy month for me!! Here is a little catch up on what I have been meaning to blog about… all in one!

First up: WORKOUTS! February has been a kick butt month so far with workouts and I have Nick to thank for that. His motivation is in high gear and going strong… it is so nice to have someone to keep you accountable!  I’m in week three now of Kayla Itsines 12 Week Beach Body Guide. Between her killer workouts on Mondays, Wednesdays, and Friday’s, incorporating a mini version of my lifting program 4 days a week, and squeezing in that cardio… it’s been an intense month so far and I’m feeling great! Between Nick’s motivation and inspiration, along with my Sister-in-law being one week ahead of me on the BBG and sharing her awesome experience, accountability is huge for me! Who or what keeps you motivated and accountable for your fitness?

Second up: LIFE! Within the first 17 days of February we had our little 6 month anniversary, Guinness turned 1, Valentine’s Day, and I had a birthday as well AND The Bachelor decided to air two nights this week?!…Thanks for adding to my list Chris!  I will give you one guess of what above occasion we celebrated the most……… DING DING DING! GUINNESS BOY!! Maybe a little ridiculous yes, but he’s our boy and I’m a little obsessed. Don’t worry, Daisy has her 2nd birthday next month and will get the same treatment. On his birthday, we had our niece over for the day and I think this made his birthday complete 😉 He didn’t leave her side, so cute!

For Valentine’s Day we went to dinner and a Hockey game <3 and for my birthday Nick made an amazing dairy free, whole wheat shrimp pasta and I think I could eat it every single day of my life!
